Essaouira






I selected these sardines especially for their gleaming coats and docile manner. Each stall in the arcade, wedged between the Place Orson Welles and the ocean, assembles fresh daily its own fish collage. From the latter you select your specimen, then haggle over its price, watch it sizzle on the grill, and eat it au naturel, French for "without napkins."
